Job Requirements
- High school diploma or HSE
- Working knowledge of principles of sanitary food preparation
- Ability to apply safety policies and supervise operation of kitchen equipment
- Knowledge of English grammar and report preparation
- Ability to comply with safety policies including OSHA guidelines
- Maintain confidentiality of department information
- Ability to comply with employer policies including attendance and drug-free workplace
- Ability to perform arithmetic operations and data-driven decisions
- Ensuring maintenance of clean and sanitized work areas
- Ability to serve public and inmate population with diplomacy
- Communicate orally and in writing effectively
- Work in a team and manage multiple tasks
- Physical ability to perform essential duties including lifting and prolonged sitting
- Availability to work extended and weekend hours
Job Qualifications
- High school diploma or HSE
- Working knowledge of sanitary food preparation principles and ability to apply them to large scale cooking
- Ability to supervise operation of industrial kitchen equipment such as dishwasher, steamer, food processor, blender, can opener, scales, meat slicer, cutter, oven, mixer, and grill
- Proficient in standard English grammar, spelling, and punctuation with ability to prepare detailed reports
- Knowledge of department safety policies, procedures, and OSHA guidelines
- Ability to maintain confidentiality and comply with employer policies including drug-free workplace and personal conduct
- Strong communication skills with diverse groups including coworkers, vendors, and public
- Ability to work effectively in a team environment and handle multiple tasks
- Physical ability to perform job duties including sitting, walking, bending, lifting objects under 25 pounds, and clear communication
Job Duties
- Plans and prepares monthly menus and recipes including special meals for detainees with unique dietary needs according to doctor's orders and in consultation with dietitian
- Prepares and serves meals by adjusting measurements and food quantities to meet schedule and compliance with local codes
- Supervises inmate workers assisting in meal preparation and serving, ensuring cooperative work and cleanliness
- Monitors and maintains inventory, contacts vendors, researches prices, orders food and supplies, verifies deliveries, and maintains storage cleanliness
- Ensures security of kitchen utensils and doors
- Monitors kitchen equipment for servicing and maintenance needs
- Communicates professionally with Jail Deputies via radio
- Performs related duties as assigned
