Job Requirements
- High school diploma or equivalent
- Previous experience in large-scale cooking or institutional food service preferred
- Knowledge of food safety and sanitation practices
- Familiarity with various cooking methods including roasting, frying, boiling and broiling
- Ability to adjust recipes and substitute ingredients without compromising quality
- Strong attention to detail
- Ability to evaluate food quality by observation and tasting
- Basic skills in operating kitchen equipment and utensils
- Good communication and teamwork skills

Job Duties
- Cook food in quantities according to menu and number of persons to be served adjusting recipes as needed
- Confer with other agency personnel and review menus to determine quantity and types of ingredients and substitute menu items
- Roast, fry, boil, broil and season meats, fish, poultry, vegetables and other foods
- Measure and mix ingredients according to recipe using kitchen utensils and equipment to prepare soups, salads, desserts, dressings, gravies, sauces, stews
- Determine type or amount of ingredients to be substituted or omitted without altering taste, appearance or quality
- Evaluate food for quality, quantity, appearance, temperature and taste by observation and tasting
- Operate and use kitchen equipment such as cutlery, grinders and slicers to prepare food
- Weigh portions to ensure uniformity in servings
- Store food at proper temperatures to prevent spoilage
- Sharpen knives, meat saws and other cooking tools
- Clean and sterilize cooking equipment and work areas
- Place prepared food in carts for delivery
- Transport food from kitchen to serving area
