Job Requirements

  • Must be willing to work late hours and weekends as business requires
  • Ability to work with a diverse workforce with varying backgrounds and skill sets
  • Knowledge of varying cuisines quick serve and family style dining experience is preferred
  • Must be able to work a flexible and varying schedule based on special events and business demands
  • Ability to ideate create and execute menu offerings as a high level
  • Professional Food Manager certification is required
  • Completion of post-secondary culinary arts certification degree program or apprenticeship or equivalent experience
  • 7 plus years of culinary experience in a high volume environment with 3 plus years of supervisory experience or equivalent combination of education and experience
  • Consistent attendance is a job requirement

Job Duties

  • Oversee and lead culinary operations at Universal Kids Resort including theme park and hotel restaurant operations
  • Ensure the highest level of food quality, consistency and food safety
  • Lead and directly supervise all salaried and hourly culinary personnel
  • Manage revenue and margin generation controlling food cost labor cost inventory and spoilage
  • Conduct quality inspections and partner with outsourced food distributors to maintain food presentation and product quality
  • Partner with front of house leadership to ensure standards and successful operations
  • Oversee daily cleanliness and safe food practices adhering to HACCP program
  • Support recipe development menu innovation and specialty item creation with research and development team
  • Coordinate outsourced large catering events with Food and Beverage operations and Guest programs and events teams
  • Act as coach and mentor for culinary and food and beverage team
  • Participate in Talent Review process and promote team collaboration
  • Perform other duties as assigned
