Job Requirements

- Ability to work with a diverse workforce with varying backgrounds and skill sets
- Knowledge of varying cuisines quick serve and family style dining experience is preferred

- Ability to ideate create and execute menu offerings as a high level
- Professional Food Manager certification is required
- Completion of post-secondary culinary arts certification degree program or apprenticeship or equivalent experience
- 7 plus years of culinary experience in a high volume environment with 3 plus years of supervisory experience or equivalent combination of education and experience
- Consistent attendance is a job requirement

Job Duties
- Oversee and lead culinary operations at Universal Kids Resort including theme park and hotel restaurant operations
- Ensure the highest level of food quality, consistency and food safety
- Lead and directly supervise all salaried and hourly culinary personnel
- Manage revenue and margin generation controlling food cost labor cost inventory and spoilage
- Conduct quality inspections and partner with outsourced food distributors to maintain food presentation and product quality
- Partner with front of house leadership to ensure standards and successful operations
- Oversee daily cleanliness and safe food practices adhering to HACCP program
- Support recipe development menu innovation and specialty item creation with research and development team
- Coordinate outsourced large catering events with Food and Beverage operations and Guest programs and events teams
- Act as coach and mentor for culinary and food and beverage team
- Participate in Talent Review process and promote team collaboration
- Perform other duties as assigned
