Job Requirements

  • minimum of 5 years experience in a culinary leadership role
  • culinary degree or equivalent professional certification
  • strong understanding of food preparation and presentation standards
  • proven track record of managing kitchen operations and financial targets
  • ability to lift and move up to 40 pounds regularly
  • excellent communication and organizational skills
  • willingness to work in a fast-paced, start-up environment
  • ability to stand, walk and perform physical tasks frequently
  • availability to work flexible hours including evenings and weekends
  • compliance with all relevant health, safety and labor laws

Job Duties

  • Implement the culinary direction and leadership for the club's restaurants, lounges and bars
  • lead the kitchen culinary team to achieve exceptional food quality and manage kitchen financial goals
  • monitor kitchen performance and maintain facilities in accordance with club service standards
  • ensure high member satisfaction and exceptional dining experiences
  • create a respectful culture and provide staff training and development
  • coordinate menu planning, recipe development and input into the recipe database
  • monitor and analyze kitchen cost centers financial performance and contribute to club profitability
  • implement and monitor food preparation methods, portion sizes and presentation
  • review menus and analyze recipes for labor and overhead costs and price menu items
  • prepare ingredients and food items prior to and during meal periods
  • assist kitchen staff with duties as required
  • maintain food and beverage marketing activities and club programming initiatives
  • hire, train, empower, coach, counsel and conduct performance and salary reviews
  • implement and maintain food inventory
  • coordinate operations with other club departments for efficient member service
  • assist in implementing procedures to increase member and employee satisfaction
  • understand and comply with all club policies, standards and training programs
  • assume full responsibility for culinary quality
  • perform purchasing and inventory responsibilities
  • fill in where needed to ensure guest service standards and operations
  • continually develop staff managerial and professional skills
  • ensure timely employee performance appraisals
  • attend management meetings
  • comply with all federal, state and local health, safety and labor regulations
  • investigate and resolve member complaints regarding food quality and service
