Job Requirements
- High school diploma or equivalent
- minimum 5 years’ experience in a chef role within a high-volume environment
- culinary degree preferred
- ability to schedule and manage kitchen and dishroom staff
- knowledge of Rhode Island food safety codes and HACCP regulations
- ability to manage inventory and order supplies
- strong leadership and communication skills
- ability to work in fast-paced, high noise environments
- physical ability to lift up to 50 lbs
- must obtain appropriate Rhode Island mandated gaming licenses
- Food Safe Certified
Job Qualifications
- Minimum 5 years’ experience as a chef in a high-volume restaurant, creating high quality food products
- culinary degree preferred
Job Duties
- Schedule staff, both kitchen and dishroom
- create daily specials menu
- calculation of inventory requirements
- oversee cleanliness of kitchen, refrigeration, dishroom and all other kitchen support areas
- communication with front of house staff
- ordering of all food and supplies needed, as well as costs
- hiring, firing and supervision of necessary personnel
- knowledge and compliance of all RI food codes and HACCP laws
- ensure wait staff and kitchen staff fully understand all items for sale each day, while ensuring security of kitchen after hours
- ensure all items leaving kitchen are charged for or brought to the Food Service General Kitchen Manager’s attention
- responsible for kitchen and all support staff during all hours of operation
