Job Requirements

  • 2+ years high volume commercial kitchen experience
  • minimum three professional references required with application submission
  • proficient in relevant skills relating to specific role
  • quality driven
  • ability to self-motivate
  • maintain a clean work environment
  • uphold health department standards
  • able to both lead a team and take direction
  • must work a minimum 6-days 70-hours per week
  • must live on-site in a rural setting with the possibility of shared living spaces
  • must be able to stand for long periods of time
  • must be able to work for long periods of time
  • must be able to lift and carry a minimum of 50 pounds
  • must be able to bend, stretch, and reach for extended periods of time
  • must possess a ServSafe Allergens Certification before the start of camp (company sponsored)
  • must be able to cook from scratch
  • institutional and batch cooking experience highly desirable

Job Qualifications

  • High school diploma or equivalent
  • minimum two years of high-volume commercial kitchen experience
  • proficient in culinary skills relevant to the role
  • demonstrated ability to lead a team and follow direction
  • effective communication skills
  • knowledge of health department sanitation standards
  • ServSafe Allergens Certification or ability to obtain before camp start
  • experience with institutional and batch cooking highly desirable
  • experience in scratch cooking from raw ingredients
  • ability to train and mentor kitchen personnel
  • strong organizational and time management skills

Job Duties

  • Control inventory
  • assist in assembling orders to be placed
  • manage project timelines
  • facilitate communication among staff and clients
  • uphold Wolfoods standards of service and quality
  • maintain health department sanitation standards
  • manage and supervise kitchen staff
  • build and maintain client relations
  • follow the comprehensive Wolfoods Camp Food Training Program
  • attend related in-service training and staff meetings
  • use weights and measures to accurately execute recipes
  • prepare all menu items including special requests
  • strictly follow standardized recipes
  • ensure accurate timing, quantity, quality, and plating for production
  • actively engage in planning, scheduling, directing, and training
  • understand and implement cross utilization and excess production/leftover management
  • estimate production needs and establish par levels
  • order sufficient supplies and maintain inventory
  • ensure kitchen and equipment comply with health standards
  • teach and enforce safety regulations
  • perform specialized food preparation for events
  • prepare safe special diet and allergen-sensitive foods
  • assist in recipe development and tasting
  • contribute to menu planning
  • recommend equipment purchases
  • occasionally act as front-of-house supervisor in absence of other Wolfoods staff
