Job Requirements

  • must have 3-5 years experience as head chef, chef de cuisine or executive sous chef or combination thereof
  • must have solid record of success in kitchen management in high-end restaurant service environments
  • must be able to stand and walk for long periods during service
  • must be able to lift up to 50 pounds
  • must be able to work a variety and duration of hours and shifts
  • must maintain Serv-Safe certification

Job Qualifications

  • 3-5 years experience as head chef, chef de cuisine or executive sous chef or combination thereof
  • solid record of success in kitchen management in high-end restaurant service environments
  • leadership ability to inspire teamwork, energy, enthusiasm and results
  • experience in budgeting and forecasting with history of delivering on forecasted results
  • excellent relations with customers, vendors and front of house staff
  • ability to design, implement and continuously improve systems and procedures
  • experience in training and staff development
  • self-directed and independent yet integral to management team
  • history of managing labor and food cost budgets contributing to financial success
  • ability to deliver Zingerman's experience to every guest
  • experience working with daily changing menus
  • passion for food and continuous learning
  • known for maintaining an exceedingly clean kitchen with consistent health department compliance

Job Duties

  • Develop and manage sous chefs and kitchen supervisors
  • hire and oversee training and performance reviews for all back of house staff following principles of servant leadership, stewardship and entrepreneurial approach
  • schedule back of house staff
  • develop new menu items under direction of managing partner and document recipes and procedures
  • ensure all food meets quality and presentation standards
  • cook sauces and meats according to Zingerman's Roadhouse standards
  • resolve customer complaints passed up from staff or escalate to managing partner
  • know regular customers by name and dining preferences
  • order and oversee inventory management except office supplies, retail goods and liquor
  • regularly teach staff classes including orientation and food safety
  • complete training passport within stated timeframes and live the training compact
  • foster weekly DOR huddles with staff
  • establish and maintain good communication and positive working relationships with managing partner, restaurant manager and front of house staff
  • maintain Serv-Safe certification
