Job Requirements

Must obtain and maintain valid licenses and certifications per Federal, State, and Gaming regulations
must successfully pass background check
must successfully pass drug screening
must be at least eighteen years of age
High School Diploma or equivalent
culinary apprenticeship, associate degree or equivalent industry experience
ability to work flexible shifts and schedules
ability to communicate effectively
ability to stand for duration of shift
ability to bend and lift
knowledge of basic food preparation and line work

Job Qualifications

culinary apprenticeship or associate degree from a culinary institution preferred
some industry experience preferred
knowledge of basic food preparation
ability to communicate effectively with employees and guests
ability to use kitchen equipment such as choppers, slicers, mixers, and grinders
physical ability to stand for entire shift
ability to bend and lift up to 100 pounds
ability to make Dim Sum
valid licenses and certifications per Federal, State, and Gaming regulations

Job Duties

Creates an atmosphere that induces guests to choose Hard Rock Hotel & Casino Sacramento at Fire Mountain for gaming entertainment
responsible for actively building and retaining guest relations and mentoring team members to provide superior guest service
prepares foods that are grilled, fried, broiled, baked, boiled, braised, poached, or prepared in the pantry
ensures all plates or pans are aesthetically appealing and cooked to specifications
recognizes a variety of sauces and properly places them on entrees
keeps workstation neat and clean
assists co-workers to ensure efficient kitchen operation
performs duties for special events or parties as needed
ensures cleanliness of work area and reports equipment safety failures
properly stores food items including leftovers
ensures items are fully stocked and equipment is functioning
ensures proper closing down of workstations
assists with carving, cooking, setup, and teardown at special events
attends and participates in meetings and completes follow-up
performs work regularly and predictably
cleans and sanitizes work and public spaces
trains new team members in cooking procedures and regulations
sets up new team members with daily routines
orders product and adjusts prep sheets based on business needs
controls kitchen and expo line
communicates with front and back of house leaders on operations
performs other duties as assigned
