Job Requirements
- Minimum of 6 months wok-cooking experience where food is prepared to order
- preferred ability to work two woks simultaneously
- if no previous wok experience, minimum of 9 months sauté experience in high volume casual dining kitchen
- successful completion of wok-training program
- food preparation skills
- knowledge of HACCP standards
- ability to speak, read, comprehend instructions, correspondence and policies
- ability to converse comfortably and professionally
- ability to work in varied kitchen temperatures including very warm environments
- ability to stand and/or walk for up to nine hours
- ability to handle a knife
- ability to adapt to new menu items and cooking techniques
- ability to perform basic math and measurement calculations
- physical ability to reach, bend, balance and transport objects weighing up to 30 lbs repeatedly, sometimes up to 50 lbs

- capacity to perform basic math and measurement calculations related to recipes
- ability to reach, bend, balance and transport objects up to 30-50 lbs repeatedly throughout shift
Job Duties
- Follows recipes and product directions for preparing and wok-cooking all specified menu items
- works with a sense of urgency to meet time goals while adhering to recipe standards
- tastes products, follows menus, estimates food requirements, checks production and keeps records to accurately plan production requirements and requisition supplies
- performs basic math and measurement calculations associated with recipes
- operates kitchen equipment such as buffalo chopper, fryers, and cleavers
- handles knives while wearing a cut glove
- maintains quality control for all products including monitoring freshness
- cleans and sanitizes workstations and equipment
- follows excellent food safety and sanitation practices complying with HACCP standards
- stocks, dates, rotates, and checks product temperature
- receives, moves, and lifts food and beverage products and supplies
- complies with HMSHost, franchise, and regulatory policies
