Job Requirements

  • Minimum 21 years of age to serve alcoholic beverages
  • Must have valid Food Handler's card required by the State of Texas
  • Diploma or some college education or equivalent work experience
  • Ability to perform physical tasks including lifting up to 50 pounds
  • Excellent communication skills in English
  • Ability to maintain confidentiality and handle sensitive information
  • Must be detail oriented with strong organizational skills
  • Ability to work flexible hours including busy periods
  • Must follow state liquor laws and company policies

Job Qualifications

  • Diploma or some college or equivalent combination of education and work experience
  • WSET certified and/or Court of Master Sommelier certifications preferred
  • Must have valid Food Handler's card required by the State of Texas
  • Minimum 21 years of age to serve alcoholic beverages
  • Proven ability to train and educate staff on wines
  • Strong interpersonal and communication skills
  • Ability to work with minimal supervision and as part of a team
  • Knowledge of POS and manual stock control systems
  • Ability to handle guest complaints effectively
  • Understanding of wine and food pairings
  • Ability to maintain confidentiality of guest and company information
  • Fluent in English, other languages preferred

Job Duties

  • Ensure the delivery of brand promises supporting Relationship Hospitality and reinforcing Rosewood Hotels & Resorts values
  • Exercise responsible behavior and positively represent the restaurant team and Rosewood Hotels & Resorts
  • Maintain high standards of personal presentation and grooming
  • Comply with all departmental policies service procedures and standards
  • Maintain superior service standards on a daily basis
  • Maintain knowledge of VIPs as determined by Hotel & Residents
  • Recommend and sell wines and other beverages to guests
  • Promote digestives
  • Abide by state liquor regulations prohibiting service to minors intoxicated people and drunk driving
  • Conduct wine education classes
  • Train front of house staff on wine and wine matching
  • Perform monthly stock control and inventory updating stock forms
  • Maintain and update wine and beverage lists ensuring availability and pricing accuracy
  • Greet guests handle comments problems and promote sales
  • Develop guest relationships with a personal touch
  • Make requisitions for supplies to maintain stock levels
  • Maintain knowledge of POS and manual systems
  • Anticipate guest needs respond promptly acknowledge guests at all times
  • Maintain positive guest relations
  • Be familiar with hotel services local attractions to respond to inquiries
  • Handle guest complaints ensuring satisfaction
  • Monitor cleanliness sanitation and organization of work areas
  • Perform additional duties as required by the Director of Wine
  • Report for shifts on time prepared
  • Follow opening procedures and handle deliveries
  • Communicate changes in wine stock or vintages
  • Ensure stations have sufficient clean glasses and decanters
  • Participate in service briefings
  • Assist service team including bussing and table resetting
  • Follow Order of Service maintaining tables
  • Respond to menu and drinks queries knowledgeably
  • Place individual glass changes per order
  • Prioritize guests such as SAGs unhappy guests and regulars
  • Record guest preferences in table management system
  • Top up wine and water as needed
  • Handle issues complaints breakages and spillages promptly
  • Communicate issues to director of Outlets/Assistant General Manager
  • Maintain cleanliness in restaurant
  • Follow closing procedures
  • Complete checklists honestly
  • Manage wine stock levels and ordering
  • Replenish fridges and shelves before service
  • Maintain efficient restaurant operations during service
  • Keep wine list tidy and up to date
  • Ensure correct wine serving temperature and quality
  • Deliver consistent wine training for staff
  • Curate all hotel wine lists under Director of Wine guidance
  • Monitor beverage menu engineering controlling sales mix and price range
  • Maintain beverage costs in line with budget
  • Collaborate with Executive Chef and Chefs de Cuisine on wine list relevancy
  • Gather information on wine regions quality availability and prices
  • Keep POS system updated in line with wine list and SKUs
  • Plan coverage for on-trade shows and wine tastings
  • Engage in wine-related projects under Director of Wine
  • Pre-select potential wines and organize tastings
  • Foster and maintain supplier relationships
  • Supervise wine stock levels movements and recommend actions
  • Train all Food & Beverage associates in wine knowledge up-selling and service
  • Construct and facilitate wine training for management and associates
