Job Requirements
- Education level of 2-year or 4-year college degree or Culinary Degree as specified
- Minimum 1 to 5 years of progressive experience in a hotel or related field
- Hold certifications in Food Handlers, Alcohol Awareness, CPR and First Aid
- Proficiency in Windows operating systems and company software
- Ability to lead food and beverage operations across multiple outlets
- Experience in managing budgets, payroll and overhead costs
- Strong communication and problem-solving skills
- Ability to maintain composure under high pressure
- Eligibility and ability to interact professionally with guests and staff
- Valid driver license and ability to drive safely for business purposes
- Trustworthiness to handle sensitive information and assets
- Must be able to work overtime as required to meet job responsibilities
Job Qualifications
- At least 5 years of progressive experience in a hotel or related field, a 2-year college degree, and 3 or more years of related experience
- Or a 4-year college degree and at least 1 to 2 years of related experience or a Culinary Degree with 1 to 2 years of progressive experience in a hotel or related field
- Hold and maintain applicable certification requirements including Food Handlers, Alcohol Awareness, CPR and First Aid
- Proficient in Windows operating systems, company approved spreadsheets and word processing
- Extensive experience in restaurant bar, banquet, catering, in room dining, and kitchen management
- Effective communication skills including speaking, reading and writing
- Ability to evaluate and select among alternative courses of action quickly and accurately
- Ability to work well in stressful, high pressure situations maintaining composure
- Effective at handling workplace problems including anticipating, preventing, identifying and solving issues
- Ability to assimilate complex information from disparate sources and adjust to meet needs
- Ability to listen, understand, clarify and resolve concerns raised by co-workers and guests
- Ability to work with and understand financial information, perform basic arithmetic, analyze and forecast data
- Familiarity with general organization of a Hotel and function of each department
- Knowledge and experience with forecasting, budgeting, labor management, and purchasing
- Ability to complete forecasting and budgeting timely
- Maintain professional working relationships and open lines of communication with all levels
- Awareness of local competition and industry trends
Job Duties
- Organize, direct, supervise and assist in the preparation and service of all food and beverage for the Restaurant, Room Service, Market, Employee Cafeteria and Banquets, maintain the highest standards to produce an appealing and appetizing product
- Ensure cleanliness, sanitation and safety in kitchens, service stations, FOH, BOH work and storage areas while minimizing waste and maximizing cost/production ratio
- Plan meals and service while directing and guiding the Chef with various assignments including pricing and banquets
- Provide oversight of kitchen staff, outlets, banquet food display merchandising, and operations of the kitchen, service, beverage and banquet departments
- Handle cash, prepare and deposit cash drops, secure and balance bank
- Maintain a high level of trust and responsibility while representing the company with a good reputation and sound judgment
- Interact regularly with guests and colleagues ensuring professional communication and service
- Access and control sensitive areas including Hotel Safe, Master Keys, guestrooms, Storage/Liquor Room and secured file cabinets
- Drive safely on behalf of the company for business reasons
