Job Requirements
- Must be 18 years of age or older upon employment
- High school diploma or equivalent required
- Associates or Bachelor’s degree preferred
- Excellent interpersonal, customer service, communication, coaching, team building and problem solving skills required
- Must possess leadership, fairness, and sensibility
- Ability to instill pride and responsibility in staff
- Experience in food and beverage field for at least six years
- Supervisory experience in a high volume restaurant for at least three years
- Experience as general manager of dining restaurant for one year
- Ability to understand and manage budgets
- Knowledge of labor and productivity standards
- Ability to evaluate and interpret reports
- Computer literacy including Microsoft Office and automated systems
- Ability to resolve problems and handle guest recovery situations
- Ability to communicate effectively and diplomatically
- Must be able to work under pressure in a fast-paced casino environment
- Ability to stand, walk, and move through all areas of casino and hotel
- Ability to work in an environment where smoking is permitted

- General knowledge of full service dining and food and beverage service procedures
- Ability to understand budgets and hold responsible units accountable
- Knowledge of labor and productivity standards measured by covers per hour
- Ability to evaluate statistical and business reports
- Computer literate with broad knowledge of Microsoft Office and restaurant automated systems
- Ability to make decisions and direct others
- Strong public speaking and communication skills
- Ability to interact effectively with customers and staff
Job Duties
- Implement and maintain upscale standards upon division management approval
- Train all restaurant staff to perform their duties in accordance with company standards
- Monitor and evaluate staff performance regularly
- Ensure all products served meet established specifications and quality standards
- Manage budget to achieve fiscal and performance goals and recommend changes to enhance profitability
- Maintain rotation of weekly and seasonal special menu offerings based on trends and feedback
- Stay informed on new dining concepts aligned with property plans
- Provide disciplinary action when needed
- Facilitate weekly management meetings and attend property management meetings
- Maintain control of restaurant operations including guest greeting, seating, service failure resolution, and complaint handling
- Report incidents to appropriate management
- Ensure prompt and professional guest service
- Collect guest feedback about dining experience
- Perform administrative duties such as scheduling, payroll, and personnel management
- Advise Director of Food & Beverage on daily concerns and resource utilization
- Complete daily and incident reports
- Prepare paperwork and ordering for supplies and equipment
- Communicate regularly with associates about casino activities and events
- Ensure staff behavior and appearance complies with standards
- Share accountability for meeting cost, labor, and expense goals
- Conduct 90-day and annual staff performance evaluations
- Uphold information security policies
- Provide exceptional customer service and maintain a professional work environment
- Meet attendance guidelines and company policies
- Complete required training programs within nine months
- Attend all necessary meetings
- Adapt duties and expectations as job requirements change
- Work hours based on a 24-hour schedule
