Job Requirements
- Must be over 18 years old
- Authorized to work for any U.S. employer
- Certified food handler is preferred
- Experience in food preparation such as washing, peeling, chopping, slicing, and dicing
- Proficient in handling and using knives for cutting and prepping food
- Proven experience as a line cook or sushi line cook with understanding of cooking techniques, flavor profiles, and food safety
- Knowledge of sushi techniques and familiar with authentic Japanese cuisine and ingredients is a plus
- Familiarity with kitchen equipment operation and maintenance including grills, ovens, salamanders, broilers, and fryers
- Ability to prioritize tasks and manage time effectively in a fast-paced environment
- Strong focus on accuracy and precision for consistent quality
- Excellent communication and teamwork skills
- Ability to work long hours standing, in hot, fast-paced conditions, and lift heavy objects
- Willingness to work evenings, weekends, and holidays as required
- Relevant certifications such as sushi chef certificate or culinary degree is a plus
- Valid California Driver License

- Previous experience as a line cook or sushi cook
- Knowledge of food safety and sanitation practices
- Proficient knife skills including fish butchery
- Ability to follow recipes and presentation standards

Job Duties
- Ensuring the store is neat, clean, and presentable
- Provide proper customer service as per the companys expectations
- Fulfill the task list and follow the schedule requirements in a timely and accurate manner
- Set up and stock stations with all necessary supplies and ingredients before each shift
- Prepare and execute a variety of menu items including appetizers, entrees, and sides following established recipes and guidelines
- Utilize advanced knife skills for fish butchery and precise ingredient preparation
- Cook and grill food items according to specified methods, temperatures, and portions
- Prepare and assemble sushi rolls, nigiri, and other sushi dishes according to recipes and presentation standards
- Adhere to strict food safety and sanitation standards including proper handling, storage, and labeling of ingredients
- Monitor and manage cooking times to ensure timely serving and consistent order flow
- Ensure all dishes meet quality standards in taste, appearance, and portion size
- Coordinate orders and communicate special requests or dietary restrictions within the kitchen team
- Assist in monitoring and controlling inventory levels and notify supervisors of shortages
- Participate in cleaning and maintenance tasks including equipment cleaning, dishwashing, and kitchen organization
- Wash and sanitize dishes, glassware, flatware, and cookware following procedures
- Handle and store all kitchen tools and equipment to maintain cleanliness and prevent damage
- Organize and stock clean dishes and utensils to ensure smooth kitchen operations
- Maintain a clean, safe work environment and promptly address potential hazards
- Adhere to food safety and sanitation regulations including waste disposal
- Assist in other areas such as food preparation, plating, or general cleaning when necessary
