Job Requirements

  • physical stamina to lift up to 50 pounds and stand prolonged periods

Job Qualifications

  • 1-3+ years of professional experience in viennoiserie production with understanding and expertise in lamination techniques
  • strong understanding of dough development, fermentation, and production in a commercial setting
  • ability to work efficiently in a fast-paced, high-volume environment without compromising quality
  • exceptional attention to detail and consistency in shaping and finishing products
  • flexibility to work early mornings, evenings, weekends, and holidays as production demands
  • effective communication and collaboration skills to work with cross-functional teams
  • physical ability to lift up to 50 pounds, stand for extended periods, and perform repetitive tasks

Job Duties

  • Prepare and laminate dough for croissants, danishes, and other viennoiserie items, maintaining precise layer counts and consistency
  • portion, shape, and proof viennoiserie products with an emphasis on uniformity and detail
  • follow established recipes and production schedules while maintaining strict quality standards
  • ensure all products meet visual, textural, and flavor expectations before packaging or distribution
  • safely operate and maintain tools and machinery such as sheeters, mixers, and ovens
  • work effectively to meet daily production targets set forth by the viennoiserie lead or pastry sous chef
  • monitor and report ingredient levels to the ordering manager to ensure uninterrupted production
  • maintain a clean, organized, and food-safe work environment in compliance with health and safety regulations
  • communicate effectively with the kitchen team to ensure seamless workflow and timely delivery
