- strong understanding of dough development, fermentation, and production in a commercial setting
- ability to work efficiently in a fast-paced, high-volume environment without compromising quality
- exceptional attention to detail and consistency in shaping and finishing products
- flexibility to work early mornings, evenings, weekends, and holidays as production demands
- effective communication and collaboration skills to work with cross-functional teams
- physical ability to lift up to 50 pounds, stand for extended periods, and perform repetitive tasks
Job Duties
- Prepare and laminate dough for croissants, danishes, and other viennoiserie items, maintaining precise layer counts and consistency
- portion, shape, and proof viennoiserie products with an emphasis on uniformity and detail
- follow established recipes and production schedules while maintaining strict quality standards
- ensure all products meet visual, textural, and flavor expectations before packaging or distribution
- safely operate and maintain tools and machinery such as sheeters, mixers, and ovens
- work effectively to meet daily production targets set forth by the viennoiserie lead or pastry sous chef
- monitor and report ingredient levels to the ordering manager to ensure uninterrupted production
- maintain a clean, organized, and food-safe work environment in compliance with health and safety regulations
- communicate effectively with the kitchen team to ensure seamless workflow and timely delivery
