Job Requirements
- Bachelor’s degree in food science, baking science, cereal science, or related discipline
- More than 10 years of progressive leadership experience in commercial bakery product development
- Proven ownership of formulation architecture and commercialization at large scale
- In-depth knowledge of dough systems and ingredient functionality
- Experience managing technical teams across multi-plant manufacturing settings
- Strong analytical skills and data-driven approach to process validation

- 10+ years of progressive leadership in commercial bakery product development
- Demonstrated ownership of formulation architecture and large-scale commercialization
- Deep expertise in dough systems and ingredient functionality
- Experience leading technical teams in multi-plant manufacturing environments
- Strong analytical and data-driven process validation background
Job Duties
- Define and maintain formulation architecture across all bakery platforms
- Establish standards for crumb structure, texture, flavor, appearance, and shelf life
- Analyze formulation trade-offs related to cost, quality, risk, and manufacturability
- Ensure formulation integrity across plants and ingredient sources
- Lead end-to-end development from concept through full-scale commercialization
- Translate customer and business requirements into technically sound product designs
- Oversee bench, pilot, and plant trials with clearly defined success metrics
- Provide hands-on leadership in dough rheology, fermentation systems, gas retention, and extensibility
- Drive ingredient system performance including flour, yeast, enzymes, emulsifiers, and conditioners
- Link formulation design to process execution to resolve complex performance challenges
- Set technical strategy for staling control and moisture management
- Oversee preservative systems and product stability validation
- Partner with Operations and Engineering to ensure product design aligns with equipment capabilities
- Support multi-plant consistency and process optimization initiatives
- Lead and develop a highly technical R&D organization
- Institutionalize bakery science standards and technical capability for long-term growth
