Job Requirements
- has at least 1 year of experience working in a kitchen
- must be at least 18 years of age or older
- able to work in a climate controlled environment
- has working knowledge of necessary equipment used in the kitchen
- has working knowledge about health and safety regulations
- has working knowledge of all cleaning equipment
- able to work varied shifts including weekends and holidays
- able to effectively communicate in english in both written and oral forms

Job Duties

- maintain complete knowledge of correct maintenance and use of equipment
- monitor and maintain cleanliness, sanitation and organization of assigned work areas
- adhere to all health department, sanitation and safety regulations
- maintain cleanliness and organization of supply and storage closets
- remove trash and wipe down shelves and counters
- clean floors
- remove items which do not belong and place in correct areas
- inspect cleanliness and condition of all washed equipment and areas
- re-clean items not meeting standards
- perform duties as a kitchen worker and stove cleaner as needed
- use correct cleaning chemicals for designated items according to OSHA regulations and hotel requirements
- check working condition of equipment and machinery according to specifications
- clean designated equipment
- store cleaned equipment in designated areas
- handle all glasswares carefully to prevent breakage and loss
- maintain cleanliness and working condition of garbage disposal and grease traps
- maintain cleanliness and organization of work areas throughout shift
- stock kitchen lines, restaurant service areas and buffet line with designated cleaned wares, utensils and equipment
- clean all stoves in assigned area including tops of stoves and ovens
- clean all grills, flat tops, hood units and all gas pipes connected to stoves and under all units
- clean and dry all refrigeration units in stove area
- clean spills in the kitchen and work areas immediately
- use designated chemicals, supplies and equipment to clean various floor surfaces
- transport mats to loading dock and ensure they are clean
- transport garbage containers from kitchen and work areas to dumpster
- clean garbage compactor and area as assigned
- report any damages, maintenance problems or safety hazards to supervisor
