Job Requirements
- Must have associate degree or equivalent experience
- one to two years fine dining experience
- at least one year management experience
- valid food handler's permit or ability to obtain within 30 days
- possess required state and federal certifications and licenses
- capable of standing, walking, lifting over 100 lbs, and performing various physical activities
- must be 18 years or older
- availability for full-time year-round employment including holidays
- willing to work an average of 50 plus hours per week
- able to comply with company safety and sanitation standards
Job Qualifications
- Associate degree or equivalent from a two-year college or technical school
- six months to one year related experience or training
- minimum one to two years experience in fine dining
- minimum one year management experience
- working knowledge of classical techniques for all line stations
- valid food handler's permit or ability to obtain within 30 days
- required certification and licensing according to state and federal laws
- physical ability to perform job tasks
- minimum age of 18 years
Job Duties
- Work closely with the Director of Culinary and Executive Sous Chef on menu planning, costing, and execution
- create menu descriptions, tasting notes, and wine recommendations with the Tree Room Manager
- coordinate restaurant production for daily dinner service including holidays and seasonal festivals
- develop weekend specials
- introduce specials to service staff and seek feedback
- execute menus in line with Sundance standards
- update and maintain the recipe database
- expedite and cook on kitchen lines daily
- administer restaurant orders
- train, supervise, and schedule kitchen and prep cooks as well as dishwashers
- provide education and training to kitchen and service staff
- maintain professional demeanor and communication
- cultivate a respectful atmosphere between culinary and service departments
- ensure staff compliance with safety, sanitation, and legal standards
- manage orders, inventory, and food rotation to maximize profitability
- control labor costs and minimize waste
- monitor staffing and labor budgets
- ensure staff certifications and training compliance
- oversee kitchen cleanliness
- train staff for recycling program
- promote Sundance through media and events
- requisition, interview, and hire employees
