Job Requirements
- Associate degree or equivalent experience in culinary arts or related field
- Minimum five years progressive culinary or kitchen management experience
- Hands-on cooking and kitchen management skills
- Ability to work in multiple locations as a traveling executive chef
- Proficiency with Microsoft Office suite and computer applications
- Strong leadership and communication skills
- Certification in food safety such as ServSafe preferred
- Ability to comply with safety and health regulations
- Must be able to train and supervise kitchen staff
- Willingness to engage in continuous professional development
- Ability to maintain inventory and control food costs
- Flexible schedule to accommodate travel and variable work hours
Job Qualifications
- A.S. or equivalent experience
- Five plus years of progressive culinary/kitchen management experience
- Extensive catering experience is a plus
- High volume, complex foodservice operations experience is highly desirable
- Institutional and batch cooking experiences
- Hands-on chef experience
- Comprehensive knowledge of food and catering trends with focus on quality, production, sanitation, food cost controls and presentation
- Experienced with computers including Microsoft Office, Outlook, email and internet
- Willingness to participate in client satisfaction programs/activities
- ServSafe certified is highly desirable
Job Duties
- Plan regular and modified menus according to established guidelines
- Follow standardized recipes, portioning and presentation standards
- Complete and utilize daily production worksheets and waste log sheets
- Taste completed meals to ensure quality
- Train kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation based on company and regulatory standards
- Establish and maintain cleaning and maintenance schedules for equipment, storage and work areas
- Maintain inventory of food and non-food supplies to stay within established guidelines while assuring necessary product availability
- Make decisions regarding utilization of leftover food products within company guidelines
- Comply with federal, state and local health and sanitation regulations and department sanitation procedures
- Follow facility, department and company safety policies and procedures
- Participate and attend departmental meetings, staff development and professional programs
