Job Requirements
- Bachelor's degree or equivalent culinary experience
- Minimum three years of culinary management experience
- Experience with inventory, purchasing, and cost control
- Ability to travel regularly within Lincoln, Omaha, Des Moines, and Sioux City
- Strong leadership, communication, and organizational skills
- Ability to work in a fast-paced, dynamic environment
- Passion for sustainability and local food sourcing
Job Qualifications
- Working knowledge of HACCP
- Three years of culinary management experience in contract foodservice, fine dining or restaurant settings
- Knowledge of food and catering trends in quality, production, sanitation, cost control, and presentation
- Experience with exposition cooking
- Knowledge of P&L accountability and contract-managed service experience
- ServSafe certification is a plus
Job Duties
- Full culinary management of food service operation to include inventory, ordering and receiving
- Knowledge of P&L accountability and contract-managed service experience is desirable
- Proficient in menu development, cost controls, purchasing and inventory with a focus on sourcing and utilizing local food products
- Possesses a passion for sustainability
- Manage food quality, production, sanitation, food cost controls, and presentation
- Oversee exposition cooking and culinary team operations
- Ensure compliance with food safety standards including HACCP
