Job Requirements
- Must be able to push, pull and lift/carry 50 pounds unassisted
- must be able to work overhead
- must tolerate repetitious hand, arm and wrist movements
- must be able to sit, stand and walk for long periods
- must be able to grasp objects
- must be able to tolerate long periods of knife use
- must shift between multiple activities in a timely manner
- must tolerate hot to cold temperature fluctuations
- must be on feet for many hours at a time
Job Qualifications
- Bachelor's degree in related field or equivalent work experience
- ability to work at any station in any restaurant with thorough knowledge of all line positions
- skill to follow plate presentation and recipe specifications
- ability to train employees in kitchen skills necessary to produce menu items
- excellent communication, observation and customer service skills
- familiar with restaurant layouts
- educated palate with thorough knowledge of preparing vegetables, fruits, meats, poultry, game, stocks, soups, sauces, fish, shellfish, egg and dairy products, farinaceous foods and cereals
- ability to write, read and count in English
Job Duties
- Maintain sanitation and safety according to Washoe County Health Department guidelines
- utilize proper hand washing techniques
- sanitize workstation and document wash, rinse, sanitize procedures
- maintain temperature logs for cooking and holding times including hot and cold items
- inspect employees for dress code adherence, sanitation, and work habits
- check storage areas daily and communicate issues related to food storage, receiving, handling and temperature control
- enforce portion control and food quality guidelines
- stay current with food, plating and dining trends
- identify all food products in kitchen
- demonstrate superior knife skills
- assist throughout all kitchen stations as required
- maintain highest food quality
- understand and teach proper use of kitchen equipment and utensils
- manage waste control
- ensure proper rotation and use of kitchen products at optimal freshness
- exemplify company core values, family style service, mission and vision
- promote diversity, equity and inclusion culture
- perform other job-related duties as assigned
