- working knowledge of grill, fryer, oven and slicer

Job Duties
- follow recipes and product directions for preparing, seasoning, cooking, tasting, carving and serving food items including soups, meats, vegetables and desserts
- taste products, follow menus, estimate food requirements, check production and keep records for planning production and requisition
- measure and mix ingredients
- wash, peel, cut and shred fruits and vegetables
- handle organic and specialty ingredients
- maintain quality control and monitor product freshness daily
- acquire working knowledge of ingredient specifications and seasonal variability
- coordinate food output with other cooks
- clean and sanitize work stations and equipment
- practice excellent food safety and sanitation practices complying with HACCP standards
- stock, date, rotate and check product temperature
- fully understand menu, ingredients and nutritional content and communicate this information clearly to customers
- receive, stock, move and lift food and beverage products and supplies
- comply with HMSHost, franchise, airport authority and regulatory policies
