Job Requirements

  • High school diploma or GED equivalent
  • formal culinary training preferred
  • ability to stand for extended periods
  • ability to tolerate extreme temperatures
  • must pass applicable auditions or skill testing
  • must successfully pass a drug screening test
  • must apply for and maintain a gaming license
  • must be flexible to work any shift including nights, weekends, and holidays
  • effective communication skills
  • physical ability to lift and/or move up to 50 pounds regularly and up to 100 pounds occasionally
  • ability to maintain consistent, regular attendance
  • comply with health and safety guidelines

Job Qualifications

  • Three years of experience as a cook in a high-volume restaurant
  • proficiency in braising, sautéing, broiling, and poaching
  • proficiency in using kitchen tools like slicer, mixer, knives, and spatula
  • basic knife skills
  • ability to identify pan and knife types
  • knowledge of sanitary practices
  • possession of basic cooking tools
  • knowledge of weights, measures, and cooking techniques
  • reading and math skills for recipes
  • knowledge of MSDS program
  • effective communication and organizational skills
  • ability to apply instructions from written, oral, or diagram forms
  • ability to perform basic arithmetic operations
  • must obtain and maintain a Gaming License from the Tribal Gaming Agency
  • must pass drug screening and skill tests

Job Duties

  • Support and uphold Valley View Casino's Standards of Excellence
  • maintain positive guest relations and resolve guest complaints
  • greet guests courteously and provide personalized service
  • provide direction and guidance to team members
  • organize and delegate work assignments to meet deadlines
  • train lower-level cooks in equipment usage
  • communicate with Cook III and Room Chefs regularly
  • prepare food according to standard recipes and menu
  • exhibit knowledge of various cooking techniques
  • work with delicate equipment requiring fine finger dexterity
  • prepare base sauces, stocks, and soups
  • participate in cooking, preparing, and plating food
  • operate kitchen equipment including slicer, steamer, deep fryer, ovens, broiler, grill, mixer, kettle, and flat top
  • maintain knowledge of all food products
  • prepare order lists for recipe preparations
  • perform side work including restocking
  • control food costs and quality
  • rotate products using first-in, first-out method
  • check station setup and cleanliness
  • adhere to health codes and safety procedures
  • strive for perfect plate presentation
  • perform other duties as assigned by management
  • maintain professional and ethical conduct
  • maintain regular attendance
