Job Requirements

  • Successful completion of Benihana chef training program
  • Ability to engage and entertain guests while cooking
  • Must maintain cleanliness and sanitation standards
  • Ability to follow recipe and portion specifications
  • Must adhere to food safety and handling regulations
  • Excellent communication and interpersonal skills
  • Ability to work flexible hours including evenings and weekends

Job Qualifications

  • Previous experience as chef or cook highly desirable
  • Knowledge of food safety and sanitation practices

  • Ability to perform entertaining cooking shows

Job Duties

  • Greets and welcomes guests within 15 minutes of their teppan order
  • Performs a cooking show for assigned tables ensuring interaction with guests is appropriate and courteous
  • Provides guests with information about Benihana foods as they are being cooked or upon inquiries
  • Responds promptly and courteously to guest requests
  • Asks guests for cooking preference and follows guest instructions
  • Prepares a variety of meats, seafood, poultry, vegetables and other food items using various kitchen equipment
  • Performs shift opening and closing duties such as cleaning refrigeration units, gaskets, chef carts and floors
  • Maintains kitchen, teppan cooking areas, kitchen equipment and food storage areas clean, sanitary and organized
  • Reports any kitchen equipment or maintenance issues to the chief chef or manager on duty
  • Adheres to company standards on food portioning, cooking methods, quality standards, recipes, service cycle, policies and procedures
  • Prepares foods according to portion standards including battering, breading, seasoning and marinating
  • Follows company guidelines on proper food presentation and garnishes
  • Handles, stores, labels, and rotates foods properly following public health safety and laws
  • Uses knives and equipment to portion, cut, slice, julienne, whip, beat, maintain holding temperature, chill or freeze food
  • Adheres to company guidelines on alcoholic beverage service
  • Presents a clean and neat appearance and uses courteous manner with guests
  • Notifies manager on duty immediately when guests are not satisfied or if an accident occurs
  • Participates in ensuring guest special occasion celebrations are memorable
  • May take or be in photographs with guests upon request
  • Performs other duties as assigned by supervisor
