Job Requirements

- must be able to successfully pass Benihana chef training program
- previous experience as chef or cook highly desirable
- ability to stand for extended periods
- ability to work flexible shifts including nights, weekends, and holidays

Job Duties
- Greet and welcome guests within 15 minutes of their teppan orders
- perform cooking shows for assigned tables ensuring appropriate and courteous interaction with guests
- provide guests with information about Benihana foods during cooking or upon inquiry
- respond promptly and courteously to guest requests
- ask guests for cooking preferences and follow guest instructions
- prepare a variety of meats, seafood, poultry, vegetables and other food items using kitchen equipment including broilers, ovens, grills, food processors, blenders and fryers
- perform shift opening and closing duties such as cleaning refrigeration units, gaskets, chef carts and floors
- maintain kitchen, teppan cooking areas, kitchen equipment and food storage areas clean, sanitary and organized
- report any kitchen equipment or maintenance issues to the chief chef or manager on duty
- comply with company standards on food portioning, cooking methods, quality standards, recipes, storyboards, service cycle, policies and procedures
- prepare foods according to company portion standards and recipe specifications including battering, breading, seasoning and marinating
- adhere to company guidelines on proper food presentation and garnishes for all dishes
- handle, store, label and rotate foods properly following public health safety and local laws including FIFO method
- use knives, hand tools, utensils and equipment for portioning, cutting, slicing, julienning, whipping, beating and maintaining temperature or chilling food
- adhere to company guidelines on alcoholic beverage service
- present a clean and neat appearance and courteous manner with all guests
- notify manager on duty immediately when guests are not satisfied or if an accident occurs
- participate in guest special occasion celebrations and may photograph or be photographed with guests upon request
- perform other duties as assigned by a supervisor
