Job Requirements
- Must have a high school diploma or GED
- Must be able to successfully pass Benihana chef training program
- Previous experience as chef or cook highly desirable
- Ability to engage and entertain guests effectively
- Must adhere to company food safety and portioning standards
- Ability to work in a fast-paced environment
- Good physical stamina and manual dexterity

Job Duties
- Greets and welcomes guests within 15 minutes of their teppan order
- Performs a cooking show for assigned tables ensuring interaction with guests is appropriate and courteous
- Provides guests with information about Benihana foods as they are being cooked or upon inquiries
- Responds promptly and courteously to guest requests
- Asks guests for cooking preference and follows guest instructions
- Prepares a variety of meats, seafood, poultry, vegetables and other food items for cooking using various kitchen equipment
- Performs shift opening and closing duties such as cleaning refrigeration units, chef carts and floors
- Maintains kitchen, teppan cooking areas, equipment and ensures food storage areas are clean, sanitary and organized
- Reports kitchen equipment or maintenance issues to chief chef or manager on duty
- Complies with company standards on food portioning, cooking methods, quality standards, recipes, service cycle, policies and procedures
- Prepares foods in accordance with portion standards and recipe specifications including battering, breading, seasoning and marinating
- Adheres to guidelines on proper food presentation and garnishes
- Handles, stores, labels and rotates foods properly in line with health, safety, state and local laws
- Uses knives, tools and equipment to portion, cut, slice, julienne, whip, beat, maintain holding temperature, chill or freeze foods
- Adheres to company guidelines on alcoholic beverage service
- Presents a clean and neat appearance and courteous manner with all guests
- Notifies manager on duty promptly when guests are dissatisfied or if accidents occur
- Participates in ensuring guest special occasion celebrations are memorable
- May be asked to photograph or be photographed with guests
- Performs other duties as assigned by a supervisor
