Job Requirements

  • High school diploma or GED required
  • Ability to successfully complete Benihana chef training program
  • Previous experience as a chef or cook preferred
  • Excellent communication and interpersonal skills
  • Ability to engage and entertain guests in a courteous and professional manner

Job Duties

  • Greet and welcome guests within 15 minutes of their teppan order
  • Perform a cooking show for assigned tables ensuring appropriate and courteous interaction with guests
  • Provide guests with information about Benihana foods during cooking or upon request
  • Respond promptly and courteously to guest requests
  • Ask guests for cooking preferences and follow guest instructions
  • Prepare a variety of meats, seafood, poultry, vegetables, and other food items using kitchen equipment including broilers, ovens, grills, food processors, blenders, and fryers
  • Perform shift opening and closing duties such as cleaning refrigeration units, gaskets, chef carts, and floors
  • Maintain kitchen, teppan cooking areas, and equipment ensuring cleanliness, sanitation, and organization
  • Report kitchen equipment or maintenance issues to the chief chef or manager on duty
  • Comply with company standards on food portioning, cooking methods, quality, recipes, service cycle, policies, and procedures
  • Prepare foods according to portion standards and recipe specifications including battering, breading, seasoning, and marinating
  • Adhere to guidelines on proper food presentation and garnishes
  • Handle, store, label, and rotate foods according to public health safety and laws using FIFO method
  • Use knives, hand tools, and equipment to portion, cut, slice, julienne, whip, beat, maintain holding temperature, chill, and freeze food
  • Adhere to company guidelines on alcoholic beverage service
  • Present a clean and neat appearance and use a courteous manner with guests
  • Notify manager on duty immediately if guests are not satisfied or if an accident occurs
  • Participate in guest special occasion celebrations and take photographs if requested
  • Perform other duties assigned by a supervisor
