Job Requirements
- Must have a high school diploma or GED
- Must be able to successfully pass Benihana chef training program
- Previous experience as chef or cook highly desirable
- Ability to perform cooking show and interact with guests
- Knowledge of food safety and sanitation standards
- Must be able to work flexible hours including nights and weekends
- Ability to stand for extended periods
- Good manual dexterity and knife skills

Job Duties
- Greets and welcomes guests within 15 minutes of their teppan order
- Performs a cooking show for assigned tables ensuring appropriate and courteous interaction with guests
- Provides guests with information about Benihana foods during cooking or upon inquiry
- Responds promptly and courteously to guest requests
- Asks guests for cooking preference and follows their instructions
- Prepares a variety of meats, seafood, poultry, vegetables and other food items using kitchen equipment
- Performs shift opening and closing duties including cleaning refrigeration units, gaskets, carts and floors
- Maintains kitchen, teppan cooking areas, equipment, and food storage areas clean, sanitary and organized
- Reports equipment or maintenance issues to chief chef or manager on duty
- Complies with company standards on food portioning, cooking methods, quality, recipes, storyboards, service cycle, policies and procedures
- Prepares foods according to portion and recipe specifications including battering, breading, seasoning and marinating
- Adheres to company guidelines on food presentation and garnishes
- Handles, stores, labels and rotates foods properly following safety laws and FIFO method
- Uses knives, tools and equipment to prepare food for dining room
- Adheres to company guidelines on alcoholic beverage service
- Presents a clean and neat appearance and courteous manner with guests
- Notifies manager on duty immediately of guest dissatisfaction or accidents
- Participates in ensuring memorable guest special occasion celebrations
- Performs other duties as assigned by supervisor
