Job Requirements

  • Must have a high school diploma or GED
  • Must be able to successfully pass Benihana chef training program
  • Previous experience as chef or cook highly desirable
  • Ability to interact positively with guests
  • Ability to stand for extended periods and perform physical cooking tasks
  • Knowledge of safe food handling and sanitation procedures

  • Previous experience as a chef or cook highly desirable
  • Strong interpersonal and communication skills
  • Ability to perform physical tasks associated with cooking and cleaning
  • Knowledge of food safety and sanitation practices
  • Ability to engage and entertain guests during the cooking experience

Job Duties

  • Greet and welcome guests within 15 minutes of their teppan order
  • Perform a cooking show for assigned tables ensuring appropriate and courteous interaction with guests
  • Provide guests with information about Benihana foods as they are being cooked or upon inquiries
  • Respond promptly and courteously to guest requests
  • Ask guests for cooking preferences and follow guest instructions
  • Prepare a variety of meats, seafood, poultry, vegetables and other food items for cooking using kitchen equipment
  • Perform shift opening and closing duties such as cleaning refrigeration units, gaskets, chef carts and floors
  • Maintain kitchen, teppan cooking areas, equipment and food storage areas clean, sanitary and organized
  • Report any kitchen equipment or maintenance issues to the chief chef or manager on duty
  • Comply with company standards on food portioning, cooking methods, quality standards, recipes, storyboards, service cycle, policies and procedures
  • Prepare foods in accordance with company portion standards and recipe specifications
  • Adhere to company guidelines on proper food presentation and garnishes
  • Handle, store, label and rotate foods properly according to safety and health laws using FIFO method
  • Use knives, hand tools, utensils and equipment to portion, cut, slice, julienne, whip, beat, maintain holding temperature, chill, freeze or otherwise prepare food for the dining room
  • Adhere to company guidelines on alcoholic beverage service
  • Present a clean and neat appearance and use a courteous manner with all guests
  • Notify manager on duty immediately when guests are not satisfied or if an accident occurs
  • Participate in guest special occasion celebrations including photographing or being photographed with guests if requested
  • Perform other duties as assigned by supervisor
