Job Requirements

  • Must have a high school diploma or GED
  • Must be able to successfully pass Benihana chef training program
  • Previous experience as chef or cook highly desirable
  • Must be able to work in a fast-paced and interactive environment
  • Must have good communication and customer service skills
  • Must be able to stand for extended periods and perform physically demanding tasks
  • Must comply with all food safety and sanitation regulations

Job Duties

  • Greets and welcomes guests within 15 minutes of their teppan order
  • Performs a cooking show for assigned tables ensuring appropriate and courteous interaction with guests
  • Provides guests with information about Benihana foods during cooking or upon inquiry
  • Responds promptly and courteously to guest requests
  • Asks guests for cooking preference and follows their instructions
  • Prepares a variety of foods using kitchen equipment including broilers, ovens, grills, food processors, blenders, and fryers
  • Performs shift opening and closing duties such as cleaning refrigeration units, gaskets, chef carts, and floors
  • Maintains kitchen, teppan cooking areas, and equipment clean, sanitary, and organized
  • Complies with standards on food portioning, cooking methods, quality, recipes, and service
  • Prepares foods according to portions and recipe specifications including battering, breading, seasoning, and marinating
  • Adheres to guidelines on food presentation and garnishes
  • Handles and stores foods properly following safety laws and FIFO method
  • Uses knives and tools to prepare food for dining
  • Adheres to guidelines on alcoholic beverage service
  • Maintains a clean and neat appearance, uses courteous manner with guests
  • Notifies manager on duty if guests are unsatisfied or accidents occur
  • Participates in ensuring memorable guest celebrations, may photograph guests
  • Performs other duties as assigned
