Job Requirements

  • Must have a high school diploma or GED
  • Must be able to successfully pass Benihana chef training program
  • Previous experience as chef or cook highly desirable
  • Ability to perform under pressure in a fast-paced environment
  • Strong interpersonal and communication skills
  • Ability to stand for extended periods
  • Willingness to work flexible hours including evenings and weekends

  • Knowledge of cooking techniques and food safety practices
  • Ability to perform engaging and courteous guest interactions

  • Commitment to maintaining cleanliness and organization in kitchen areas

Job Duties

  • Greet and welcome guests within 15 minutes of their teppan order
  • Perform a cooking show for assigned tables ensuring interaction with guests is appropriate and courteous
  • Provide guests with information about Benihana foods when asked
  • Respond promptly and courteously to guest requests
  • Ask guests for cooking preference and follow instructions
  • Prepare a variety of meats, seafood, poultry, vegetables, and other food items using kitchen equipment
  • Perform shift opening and closing duties such as cleaning refrigeration units and floors
  • Maintain kitchen, teppan cooking areas, kitchen equipment, and food storage areas clean, sanitary, and organized
  • Comply with food portioning, cooking methods, quality standards, recipes, and service policies
  • Prepare foods according to portion standards including battering, breading, seasoning, and marinating
  • Adhere to guidance on food presentation and garnishes
  • Handle, store, label, and rotate foods properly following public health laws and FIFO method
  • Use knives, utensils, and equipment to portion, cut, and prepare food
  • Follow guidelines on alcoholic beverage service
  • Present a clean and neat appearance and courteous manner to guests
  • Notify manager on duty when guests are not satisfied or accidents occur
  • Participate in special occasion celebrations and may take or be in photographs with guests
  • Perform other duties as assigned by supervisor
