Job Requirements

  • High school diploma or GED
  • Ability to successfully pass Benihana chef training program
  • Previous experience as chef or cook preferred
  • Knowledge of cooking methods and kitchen equipment operation
  • Ability to engage and entertain guests
  • Strong attention to detail and hygiene
  • Ability to work flexible hours including nights, weekends and holidays

  • Previous experience as chef or cook highly desirable
  • Strong communication and interpersonal skills
  • Ability to interact with guests in a courteous and engaging manner
  • Knowledge of food safety and sanitation standards
  • Ability to follow recipes and company standards
  • Physical stamina to stand and work on feet for extended periods

Job Duties

  • Greet and welcome guests within 15 minutes of their teppan order
  • Perform a cooking show for assigned tables ensuring his/her interaction with guests is appropriate and courteous
  • Provide guests with information about Benihana foods as they are being cooked or upon guest inquiries
  • Respond promptly and courteously to guest requests
  • Ask guests for cooking preference and follow guest instructions
  • Prepare a variety of meats, seafood, poultry, vegetables and other food items for cooking using various kitchen equipment
  • Perform shift opening and closing duties such as cleaning refrigeration units, gaskets, chef carts and floors
  • Maintain kitchen, teppan cooking areas and equipment ensuring cleanliness and organization
  • Comply with Company standards on food portioning, cooking methods, quality standards, recipes, and service cycles
  • Prepare foods in accordance with Company portions and recipe specifications including battering, breading, seasoning and marinating
  • Adhere to Company guidelines on food presentation and garnishes
  • Handle, store, label, and rotate foods properly following public health safety laws and FIFO method
  • Use knives, hand tools and equipment to prepare food for the dining room
  • Adhere to Company guidelines on alcoholic beverage service
  • Present a clean and neat appearance and use courteous manner with all guests
  • Notify management on duty when guests are not satisfied or if an accident occurs
  • Participate in guest special occasion celebrations and assist with photography requests
  • Perform other duties as assigned by a supervisor
