Job Requirements

  • Must have a high school diploma or GED
  • must be able to successfully pass Benihana chef training program
  • previous experience as chef or cook highly desirable
  • ability to stand for extended periods
  • good manual dexterity
  • ability to follow safety and sanitation guidelines
  • ability to work flexible hours including nights and weekends

Job Duties

  • Greet and welcome guests within 15 minutes of their teppan order
  • perform cooking shows ensuring appropriate and courteous interaction with guests
  • provide guests with food information during cooking or upon inquiry
  • respond promptly and courteously to guest requests
  • ask for and follow guests cooking preferences
  • prepare a variety of meats, seafood, poultry, vegetables and other food items using kitchen equipment
  • perform shift opening and closing duties including cleaning of refrigeration units, chef carts and floors
  • maintain kitchen, teppan cooking areas and equipment clean and organized
  • comply with company standards on food portioning, cooking methods, quality standards, recipes and service cycle
  • prepare foods following company portion standards and recipe specifications
  • adhere to proper food presentation and garnishes
  • handle, store, label, and rotate foods according to public health and safety regulations using FIFO method
  • use knives, utensils and equipment to prepare food for dining room
  • follow company guidelines on alcoholic beverage service
  • maintain a neat appearance and courteous manner with guests
  • notify manager on duty immediately of guest dissatisfaction or accidents
  • participate in guest special occasion celebrations including photography upon request
  • perform other duties as assigned by supervisor
