- must be able to successfully pass Benihana chef training program
- previous experience as chef or cook highly desirable
- ability to maintain cleanliness and sanitation

Job Duties
- Greet and welcome guests within 15 minutes of their teppan order
- perform cooking shows for assigned tables ensuring appropriate and courteous interaction with guests
- provide guests with information about Benihana foods during cooking or upon inquiry
- respond promptly and courteously to guest requests
- ask guests for cooking preferences and follow their instructions
- prepare a variety of meats, seafood, poultry, vegetables and other food items for cooking using various kitchen equipment
- perform shift opening and closing duties such as cleaning refrigeration units, gaskets, chef carts and floors
- maintain kitchen, teppan cooking areas and kitchen equipment clean, sanitary and organized
- report any kitchen equipment or maintenance issues to the chief chef or manager on duty
- comply with company standards on food portioning, cooking methods, quality standards, recipes, storyboards, service cycles, policies and procedures
- prepare foods in accordance with company portion standards and recipe specifications including battering, breading, seasoning and marinating
- adhere to food presentation and garnishing guidelines
- handle, store, label and rotate foods properly according to health and safety laws using FIFO method
- use knives, hand tools, utensils and equipment to portion, cut, slice, julienne, whip, beat, maintain holding temperature, chill or freeze foods
- adhere to company guidelines on alcoholic beverage service
- present a clean and neat appearance
- notify management when guests are not satisfied or if an accident occurs
- participate in special occasion celebrations
- perform other duties as assigned by a supervisor
