Job Requirements

  • High school diploma and 2 or more years of culinary related experience or equivalent combination of education and experience
  • Must have knowledge of the Japanese culture
  • Bi-lingual in Japanese is required

  • Able to analyze and solve simple problems
  • Able to read and comprehend written information

Job Duties

  • Provide service with sincerity through Omotenashi by following and performing the Mitsukoshi hospitality standards and attending to the guests' needs and sharing the culture of Japan
  • Engage and entertain the guests by performing a Culinary Show entertaining the guests while cooking their orders by providing a display of cooking skills and showmanship
  • Properly cook all food items to liking and request of the guest and follow all food cooking and flavoring guidelines and adjust cooking process based on order mix and volume to ensure the serving of the best possible meals
  • Ensure smooth operations at tableside by ensuring the proper set up of carts and by properly explaining the food items being and served then balancing the cooking times of different meals to allow guests to eat at the same time
  • Maintain a clean work area by cleaning grills between sittings and cleaning personal cooking utensils and the Teppan carts as needed
  • Mentor new hires on food preparation and hygiene and oversee their work
  • Follow all food safety, sanitation and HACCP guidelines set forth either by the company or state
