Job Requirements

  • Must have a high school diploma or GED
  • Must be able to successfully pass Benihana chef training program
  • Previous experience as chef or cook highly desirable

  • Successful completion of Benihana chef training program
  • Previous experience in culinary or hospitality industry preferred
  • Ability to engage guests with culinary skills and friendly demeanor
  • Knowledge of food safety and sanitation practices
  • Strong multitasking and organizational skills
  • Excellent communication and customer service skills

Job Duties

  • Greets and welcomes guests within 15 minutes of their teppan order
  • Performs a cooking show for assigned tables ensuring interaction with guests is appropriate and courteous
  • Provides guests with information about Benihana foods as they are being cooked or upon guest inquiries
  • Responds promptly and courteously to guest requests
  • Asks guests for cooking preference and follows guest instructions
  • Prepares a variety of meats, seafood, poultry, vegetables and other food items for cooking using kitchen equipment
  • Performs shift opening and closing duties such as cleaning refrigeration units, gaskets, chef carts and floors
  • Maintains kitchen, teppan cooking areas, kitchen equipment and ensures food storage areas are clean, sanitary and organized
  • Reports any kitchen equipment or maintenance issues to the chief chef or manager on duty
  • Complies with company standards on food portioning, cooking methods, quality standards, recipes, storyboards, service cycle, policies and procedures
  • Prepares foods according to portion standards and recipe specifications including battering, breading, seasoning or marinating foods
  • Adheres to guidelines on proper food presentation and garnishes
  • Handles, stores, labels, and rotates foods properly according to health safety standards and follows FIFO method
  • Uses knives, hand tools, utensils, and equipment to prepare food
  • Adheres to guidelines on alcoholic beverage service
  • Presents a clean and neat appearance and uses a courteous manner with guests
  • Notifies manager on duty when guests are dissatisfied or accidents occur
  • Participates in guest special occasion celebrations and may photograph or be photographed with guests upon request
  • Performs other duties as assigned by a supervisor
