Job Requirements

  • Must have a high school diploma or GED
  • must be able to successfully pass Benihana chef training program
  • previous experience as chef or cook highly desirable
  • ability to work flexible hours including nights, weekends and holidays
  • physical ability to stand for extended periods and perform kitchen duties
  • excellent customer service skills
  • ability to communicate effectively with guests and team members

Job Duties

  • Greets and welcomes guests within 15 minutes of their teppan order
  • performs a cooking show for assigned tables ensuring appropriate and courteous interaction with guests
  • readily provides guests with information about Benihana foods and responds promptly to guest requests
  • asks guests for cooking preferences and follows their instructions
  • prepares a variety of meats, seafood, poultry, vegetables and other foods using kitchen equipment such as broilers, ovens, grills and fryers
  • performs opening and closing cleaning duties including refrigeration units and floors
  • maintains kitchen, teppan cooking areas, and food storage areas clean and organized, reporting maintenance issues to management
  • complies with company standards on food portioning, cooking methods, quality standards and service cycle
  • prepares foods prior to cooking including battering, breading, seasoning and marinating
  • adheres to food presentation and garnishing guidelines
  • handles, stores, labels and rotates foods properly following health and safety laws and FIFO method
  • uses knives, utensils and equipment to prepare food
  • follows company guidelines on alcoholic beverage service
  • maintains a clean appearance and courteous manner
  • immediately notifies management of guest dissatisfaction or accidents
  • participates in guest special occasion celebrations and may photograph guests
  • performs other duties as assigned by supervisor
