Job Requirements
- Must be at least 18 years old
- High school diploma or equivalent
- Food safety certified
- Valid driver's license with clean abstract
- Proven experience as a sushi chef or sushi specialist
- Knowledge of food cost, margin, and profitability impact
- Capable of calculating cost and setting retail prices
- Excellent communication and interpersonal skills
- Ability to work independently and in a team
- Ability to multitask in a fast-paced environment
- Strong organizational and time management skills
- Knowledge of Microsoft Office applications
- Able to stand for extended periods and walk frequently
- Capable of lifting up to 50 pounds and pushing/pulling up to 1000 pounds
- Flexible to work various shifts including weekends and holidays
Job Qualifications
- High school diploma or equivalent
- Food safety certification and strong understanding of sanitation regulations
- Proven experience as a sushi chef or specialist in a professional kitchen or supermarket
- Extensive knowledge of sushi types, ingredients, preparation techniques
- Strong communication skills both verbal and written
- Good interpersonal skills with a pleasant and friendly attitude
- Ability to work independently and collaboratively in a team
- Excellent organizational and time management skills
- Proficient in Microsoft Word, Excel, PowerPoint, and email correspondence
Job Duties
- Prepares a variety of 'Japanese Quality' sushi including nigiri, maki, chirashi, and inari
- Prepares 'Japanese Quality' sashimi including cutting, slicing, and filleting fish
- Manages production and proper handling of seafood products including freshness control, inventory control, and ordering
- Maintains cleanliness and sanitation practices to prevent food contamination
- Trains and develops sushi staff in preparation techniques, food safety, and equipment use
- Monitors sushi staff performance and provides coaching and support
- Manages sales systems including PLU codes, sale rules, labeling, and production logs
- Plans and schedules labor according to projected business demand
- Creates and executes production plans targeting budgeted sales
- Sets appropriate retail prices and portion sizes based on market analysis and cost calculations
