Job Requirements

  • Bachelor's degree in culinary or relevant field
  • Minimum of 5 years’ experience in a similar role
  • Extensive Japanese food preparation knowledge
  • Strong knowledge of cooking methods and kitchen equipment
  • Good understanding of MS Office and restaurant software
  • Ability to work independently and as part of a team
  • Excellent leadership, communication, and interpersonal skills
  • Ability to manage multiple tasks in a fast-paced environment
  • Physical ability to stand for 95 percent of working time
  • Ability to lift up to 40 pounds occasionally
  • Willingness to work weekends and holidays
  • Proficient in recipe production and food safety standards

Job Qualifications

Job Duties

  • Ensure food received meets specifications and health standards
  • Prepare food to corporate presentation and recipe standards
  • Conduct periodic quality and temperature checks
  • Manage food inventory and maintain proper rotation
  • Monitor sales and adjust prep production
  • Perform daily line checks with front-of-house
  • Maintain kitchen sanitation and equipment cleanliness
  • Create and manage staff schedules
  • Train and supervise kitchen staff
  • Participate in hiring and disciplinary processes
  • Oversee daily prep lists and food production
  • Ensure proper storage and labeling of food
  • Maintain professional kitchen environment
  • Coordinate with AM and PM chefs
  • Perform kitchen walkthroughs to ensure standards adherence
  • Utilize computer skills for spreadsheets and P&L analysis
  • Maintain teamwork and multi-task effectively
