Job Requirements

  • high school diploma or equivalent
  • minimum of one year culinary experience preferably in sushi or raw bar preparation
  • ability to work flexible hours including evenings and weekends
  • knowledge of safe food handling practices
  • physical ability to stand for extended periods and perform repetitive tasks
  • willingness to learn and follow restaurant policies and procedures
  • ability to work collaboratively in a team environment

Job Qualifications

  • previous experience working in a sushi or raw bar environment
  • knowledge of food safety and sanitation practices
  • ability to follow established recipes and presentation standards
  • good knife skills
  • strong attention to detail
  • ability to multitask in a fast-paced environment
  • effective communication and teamwork skills

Job Duties

  • prepare sushi and raw bar items including shucking oysters
  • perform food preparation including plating and garnishing of cooked items
  • maintain cleanliness and sanitation of food preparation and serving areas
  • regulate temperatures of kitchen equipment to ensure safe cooking
  • ensure freshness and quality of food by monitoring stock and rotating supplies
  • follow standard portion sizes, cooking methods, and quality standards
  • assist other cooks during busy periods and help close the kitchen following standard procedures
