Job Requirements
- Must be able to prepare a sushi platter on site as part of the final stage of the interview process
- Strong attention to detail
- Elevated time management, organizational, and prioritizing skills
- Excellent communication skills
- Previous sushi preparation experience
- Strong knife skills and kitchen equipment knowledge
- Must be able to obtain food safety certification
- Able to be self-motivated and work independently or as a team player
- Must have sufficient mobility to perform assigned production tasks including constant reaching, bending, stooping, wiping, pushing, and pulling for extended periods of time
- Must have the ability to lift, push, and pull up to 50lbs
- Must be able to stand or walk for long periods of time
- Must be available for stadium events
- Must be able to work extended hours due to business requirements including late nights, weekends, and holidays
- Follow and encourage your team to follow all safety policies and procedures, including but not limited to looking for and reporting any unsafe work conditions, and complete company-wide safety training and any additional job specific safety training

Job Duties
- Follows executive chef, sous chefs and/or culinary supervisors assignments for opening and closing procedures and food preparation
- Prepares sushi items by complying with portion size, quality standards, departmental rules, policies, and procedures, ensuring teams are doing the same
- Maintains HACCP standards ensuring a high-quality level of food, food temperatures, rotation of product, cleanliness, and sanitation standards
- Maintains cleanliness of kitchen including walk-in coolers, dry storage, shelves, walls, floors and drains
- Ensures all food preparation equipment is clean and sanitized and that it is kept in a safe and operable condition, report issues to chefs
- Identifies and stores all food items according to established standards
- Participates as a team player with specific responsibilities related to preparation, excellent service and delivery of product
- Must maintain a pleasant attitude towards customers, co-workers, and management
- Adheres to the legends uniform and grooming guidelines
