Hotel del Coronado, A Curio Collection by Hilton, is an iconic historic beach resort located on Coronado Island, near Downtown San Diego. Job Requirements

  • High school diploma or equivalent
  • Minimum of 1 year experience as a sushi cook or in a related culinary role
  • Must be available to work various shifts including weekdays weekends and holidays
  • Ability to stand for extended periods and perform repetitive tasks
  • Knowledge of safe food handling and storage practices
  • Excellent communication skills
  • Ability to work well under pressure in a team environment

Job Qualifications

  • Culinary degree or relevant culinary experience
  • Proven experience in sushi preparation and presentation
  • Knowledge of Japanese cuisine and sushi techniques
  • Ability to work in a fast-paced kitchen environment

  • Understanding of food safety and sanitation standards

Job Duties

  • Prepare and serve high-quality sushi and sashimi ensuring precise slicing presentation and freshness
  • Prepare cold dishes such as salads appetizers and garnishes following standard recipes and presentation guidelines
  • Set up and maintain a clean organized sushi station ensuring all tools ingredients and equipment are in place
  • Ensure all sushi and sashimi meet Nobu's quality and presentation standards monitoring freshness and ingredient quality
  • Plate sushi sashimi and cold dishes to exceptional standards for consistency and visual appeal
  • Collaborate with kitchen and front-of-house staff to ensure smooth operations and efficient service
  • Properly store and handle all raw and prepared sushi items following food safety guidelines
  • Adhere to all food safety sanitation and health regulations maintaining hygienic work environment
  • Provide high-quality beautifully presented dishes to enhance guest dining experience meeting timing and satisfaction goals
  • Maintain focus and composure during busy service hours delivering consistent high-quality food
