Job Requirements

  • 1+ year experience in high volume sushi production (restaurant or manufacturing)
  • Basic understanding of food safety and sanitation
  • Comfortable working evenings or overnight shifts
  • Able to lift up to 50 lbs and stand for long periods
  • ServSafe certification (or willingness to obtain)
  • Ability to effectively communicate in English

Job Qualifications

  • High school diploma or equivalent
  • 1+ year experience in high volume sushi production (restaurant or manufacturing)
  • Basic understanding of food safety and sanitation
  • Ability to communicate effectively in English
  • Experience using Suzumo or similar sushi rolling and cutting machines preferred
  • Familiarity with ready-to-eat (RTE) food manufacturing preferred
  • Knowledge of BOHA labeling systems preferred
  • Missouri Seafood HACCP certification preferred

Job Duties

  • Preparing sushi rice, seafood, and vegetables following standardized recipes
  • Ensure all required logbooks, including rice pH log and temperature logs, are maintained and verified
  • Rolling and cutting sushi using Suzumo automated machines
  • Following batch sheets and production targets for accuracy and efficiency
  • Packaging and labeling finished trays using BOHA terminals
  • Maintaining strict food safety and sanitation standards including HACCP and GMP compliance
  • Assisting with daily setup, cleaning, and equipment sanitation
  • Supporting continuous improvement and process consistency across the team
