Job Requirements
- 1+ year experience in high volume sushi production (restaurant or manufacturing)
- Basic understanding of food safety and sanitation
- Comfortable working evenings or overnight shifts
- Able to lift up to 50 lbs and stand for long periods
- ServSafe certification (or willingness to obtain)
- Ability to effectively communicate in English
Job Qualifications
- High school diploma or equivalent
- 1+ year experience in high volume sushi production (restaurant or manufacturing)
- Basic understanding of food safety and sanitation
- Ability to communicate effectively in English
- Experience using Suzumo or similar sushi rolling and cutting machines preferred
- Familiarity with ready-to-eat (RTE) food manufacturing preferred
- Knowledge of BOHA labeling systems preferred
- Missouri Seafood HACCP certification preferred
Job Duties
- Preparing sushi rice, seafood, and vegetables following standardized recipes
- Ensure all required logbooks, including rice pH log and temperature logs, are maintained and verified
- Rolling and cutting sushi using Suzumo automated machines
- Following batch sheets and production targets for accuracy and efficiency
- Packaging and labeling finished trays using BOHA terminals
- Maintaining strict food safety and sanitation standards including HACCP and GMP compliance
- Assisting with daily setup, cleaning, and equipment sanitation
- Supporting continuous improvement and process consistency across the team
