Job Requirements
- High school diploma or equivalent
- Prior experience as a sushi cook or chef
- Familiar with omakase dining style
- Knowledge of food safety practices
- Ability to communicate clearly
- Physical stamina to stand long hours
- Must hold valid Alcohol server certification and/or food service permit
- Ability to work flexible hours including weekends and holidays
- Ability to maintain cleanliness and order in the kitchen
- Able to lift at least 35 pounds
- Adhere to uniform and grooming standards
- Maintain positive attitude and professionalism
- Work well under pressure
- Proficient with electronic kitchen equipment
Job Qualifications
- High school diploma or equivalent
- Previous experience as a sushi cook or in a related culinary role
- Familiarity with omakase style dining and high-end sushi preparation
- Knowledge of food safety and sanitation standards
- Ability to work well under pressure in a fast-paced environment
- Excellent communication and teamwork skills
- Current Alcohol server certification and/or food service permit as required
- Physical ability to meet job demands including standing for long periods and lifting 35 pounds
- Attention to detail and commitment to maintaining high hygiene standards
Job Duties
- Execute recipes set forth by the CDC or Sous Chef
- Maintain and follow all systems within the kitchen
- Follow detailed recipes and company standards
- Participate in service daily including shift line ups, new menu roll outs, and evolving service and food standards
- Demonstrate familiarity of Omakase style dining
- Report to each shift on time and prepared to work in proper uniform
- Maintain acceptable hygiene standards
- Attend work with a positive and helpful attitude
- Produce sushi rice and form it in line with company standards
- Produce soy sauce in line with company standards
- Provide counter/ guest service with an attitude of hospitality
- Maintain fish storage and quality standards
- Be proficient in generally accepted sushi techniques and company standards
- Manage general product storage and usage
- Maintain a clean and orderly prep and service station
- Maintain inventory including quality inspection of plateware and service pieces
- Report any broken items to the CDC or Sous Chef
- Maintain a professional atmosphere with staff and supervisors
- Perform fish butchery, nigiri forming, and sushi techniques
- Maintain cleanliness of restaurant and kitchen
- Ensure a positive, safe, and enjoyable work environment
- Communicate clearly during service
- Operate electronic machinery for administrative tasks
- Stand for long periods
- Work in varied temperatures
- Lift up to 35 pounds
- Bend, twist, reach, lift or stoop to retrieve or move product
- Work in decreased light and enclosed spaces
- Hold current Alcohol server certification and/or food service permit as required
