Job Requirements

  • High school diploma or equivalent
  • Relevant experience in Japanese-style cooking
  • Previous experience working in a sushi restaurant
  • Ability to follow standardized recipes and portion controls
  • Ability to maintain safety and sanitation standards
  • Ability to work in a fast-paced environment
  • Good communication skills
  • Ability to work flexible hours including weekends and holidays

  • Relevant experience in Japanese-style cooking
  • Relevant experience working in a sushi restaurant

Job Duties

  • Follow standard preparation and cooking procedures as designated by the manager or chef
  • Follow all recipes, portion controls, and presentation specifications as set by the restaurant
  • Coordinate the delivery of all foods within pre-set time standards
  • Demonstrate product standards and recipe knowledge daily
  • Set up, maintain side work, and close stations for scheduled shift including cleaning equipment and prepping food items
  • Prepare and plate station food items according to specifications and time limits
  • Ensure safety and sanitation standards are maintained
  • Properly use personal protective equipment
  • Maintain a clean, neat, well-groomed appearance
  • Respond to all callbacks and echos to ensure ordered food is prepared on time
  • Maintain the proper pH for rice and document it in the pH log
  • Ensure hot food stays hot and cold food stays cold
  • Record all waste on standard forms when it occurs
  • Communicate product runouts, equipment issues, and service problems to the manager on duty immediately
  • Welcome and acknowledge guests according to company standards when applicable
  • Assist with cleaning, sanitation, and organization of kitchen, walk-in coolers, and storage areas
  • Order ingredients and supplies as directed by manager or chef
  • Clean, sanitize, and organize all kitchen and storage areas according to company specifications
  • Develop and maintain positive working relationships and work toward customer satisfaction
  • Ensure adherence to quality expectations and standards
  • Perform additional responsibilities as requested by the chef or manager
