Job Requirements
- Previous experience as a sushi cook or sushi chef in a high-volume restaurant or sushi bar
- Proficiency in sushi preparation techniques including knife skills seafood handling and sushi rolling
- Knowledge of different types of fish seafood and sushi ingredients as well as sushi terminology and presentation styles
- Ability to work flexible hours including evenings weekends and holidays as required

Job Duties
- Prepare sushi and sashimi dishes according to established recipes and plating standards
- Handle and portion seafood including slicing filleting and cutting fish for sushi and sashimi
- Ensure the freshness quality and proper storage of all seafood and ingredients used in sushi preparation
- Follow recipes and plating guidelines to ensure consistency and accuracy in sushi preparation
- Maintain cleanliness and organization of the sushi station including equipment tools and work surfaces
