Job Requirements
- High school diploma or equivalent
- prior experience in sushi preparation or Japanese cuisine
- knowledge of food safety standards and sanitation
- ability to stand for extended periods
- ability to work flexible hours including weekends and holidays
- good communication skills
- willingness to learn and adapt in a dynamic environment

- Relevant experience in Japanese style cooking
- relevant experience working in a sushi restaurant
- knowledge of food safety and sanitation standards

Job Duties
- Follow standard preparation and cooking procedures of assigned facility as designated by manager or chef
- follow all recipes, portion controls, and presentation specifications
- coordinate delivery of all foods within pre-set time standards
- demonstrate product standards and recipe knowledge daily
- set up, maintain side work, and close stations for scheduled shifts including cleaning and preparation
- prepare and plate station food items according to specifications and time limits
- ensure safety and sanitation standards are maintained
- use personal protective equipment properly
- maintain clean and well-groomed appearance
- respond to call backs and echos to ensure timely food preparation
- maintain proper pH for rice and document it
- ensure hot food stays hot and cold food stays cold
- record all waste on standard form
- communicate product run outs, equipment issues, and quality problems to MOD
- welcome and acknowledge guests according to company standards
- assist with cleaning, sanitation, and organization of kitchen and storage areas
- order ingredients and supplies as directed by manager or chef
- develop and maintain positive working relationships towards customer satisfaction
- ensure adherence to quality expectations and standards
- perform additional responsibilities as requested by chef or manager
