Job Requirements
- High school diploma or equivalent
- prior experience as sushi cook or similar role in Japanese cuisine
- availability to work during opening hours
- ability to stand and work continuously during shift
- strong attention to detail and commitment to quality
- understanding of food safety and hygiene standards
- good communication skills
- ability to follow directions accurately

Job Duties
- Prepare all types of sushi including maki nigiri and sashimi
- select fresh fruits and vegetables to make high-quality dishes like avocado mango and carrots
- add additional flavors to sushi rolls with ginger rice vinegar wasabi and soy sauce when appropriate
- manage food prep activities like boiling rice
- coordinate with wait staff to ensure proper cooking considering special requests and food allergies
- prepare appetizers soups and salads that are close to the philosophy of Japanese cuisine
- monitor food stock and place orders as needed
- recommend new modern recipes and specials
- maintain hygiene principles in all cooking areas and clean workspace at end of shift
- assume 100 percent responsibility for quality of products served
- comply consistently with standard portion sizes cooking methods quality standards kitchen rules policies and procedures
- maintain a clean sanitary workstation area including tables shelves walls grills broilers fryers saute burners convection oven flat top range and refrigeration equipment
- follow proper plate presentation and garnish setup for all dishes
- handle store and rotate all products properly
- understand food safety and help control bacteria growth
- understand shelf life and thaw time of products
- close kitchen properly and follow closing checklist for kitchen stations
- perform other related duties as assigned by sushi chef and executive chef
