Job Requirements
- High school diploma or equivalent
- previous experience in a sushi cook or similar culinary role
- ability to work flexible hours including weekends and holidays
- ability to stand for extended periods
- knowledge of food safety and sanitation practices
- ability to maintain cleanliness and organization under fast-paced conditions
- good communication skills
- willingness to learn and adapt to new procedures

Job Duties
- Follow standard preparation and cooking procedures as designated by manager or chef
- follow all recipes, portion controls, and presentation specifications
- coordinate delivery of all foods within pre-set time standards
- demonstrate product standards and recipe knowledge daily
- set up, maintain, and/or close stations including checking, breaking down, and cleaning equipment
- prepare and plate station food items according to specifications and time limits
- ensure safety and sanitation standards are maintained
- properly use personal protective equipment
- maintain a clean, neat, well-groomed appearance
- respond to callbacks and echos to ensure ordered food is prepared on time
- maintain proper pH for rice and document it
- ensure hot food stays hot and cold food stays cold
- record all waste on standard form
- communicate product runouts, equipment issues, and quality problems to management immediately
- welcome and acknowledge guests according to company standards
- assist with cleaning, sanitation, and organization of kitchen and storage areas
- order ingredients and supplies as directed
- develop and maintain positive working relationships
- ensure adherence to quality expectations and standards
- perform additional duties as requested by management
