Etaru is a contemporary Japanese robatayaki grill restaurant brought to the United States by Rainer Becker, co-founder and creator of the internationally acclaimed Zuma restaurants and ROKA London. Job Requirements

  • Previous experience as a sushi cook or sushi chef in a high-volume restaurant environment or sushi bar
  • Proficiency in sushi preparation techniques, including knife skills, seafood handling, and sushi rolling
  • Knowledge of different types of fish, seafood, and sushi ingredients, as well as sushi terminology and presentation styles
  • Ability to work flexible hours, including evenings, weekends, and holidays, as required
  • A genuine love for culinary experiences and a passion for Japanese cuisine

Job Duties

  • Prepare sushi and sashimi dishes according to established recipes and plating standards
  • handle and portion seafood, including slicing, filleting, and cutting fish for sushi and sashimi
  • ensure the freshness, quality, and proper storage of all seafood and ingredients used in sushi preparation
  • follow recipes and plating guidelines to ensure consistency and accuracy in sushi preparation
  • maintain cleanliness and organization of the sushi station, including equipment, tools, and work surfaces
