Job Requirements
- High school diploma or equivalent GED
- Minimum 1 year of sushi cooking experience with food preparation skills
- Knowledge of HACCP standards
- Ability to pass food and safety sanitation class
- Experience in high volume and casual dining restaurant environment
- Ability to bend, twist and stand for job functions
- Ability to lift and move up to 40 pounds
- Ability to speak, read and comprehend instructions and converse with customers
- Frequent work with sharp knives
- Frequent hand immersion in water and chemical solutions
Job Qualifications
- High school diploma or equivalent GED
- Minimum of 1 year of closely related sushi cooking experience
- Knowledge of food preparation skills and HACCP standards
- Experience in a high volume and casual dining restaurant environment
- Ability to speak, read and comprehend instructions and policy documents
- Ability to converse comfortably with customers
- Ability to pass company provided food and safety sanitation class
- Japanese language skills a plus
Job Duties
- Follows recipes and product directions for proper food preparation and presentation
- Follows menus, estimates food requirements, checks production and keeps records to plan production and requisition supplies
- Practices excellent food safety and sanitation practices and complies with HACCP standards
- Transfers supplies and equipment between storage and work areas
- Prepares appropriate equipment for cooking
- Operates kitchen utensils and equipment used for heating, weighing, measuring, mixing, washing, peeling, cutting, grinding, stirring, straining, slicing, assembling and kneading
- Ensures proper food handling procedures are followed for wrapping, labeling, dating, stocking, storing, rotating and checking temperature of products
- Receives and inventories food and beverage products and supplies
- Cleans and sanitizes workstation and equipment
- Stocks, dates, rotates and checks temperature of product
